I still make bubble and squeak the way my great grandmother taught me. I take the leftover roast dinner whether it’s beef or pork or lamb and I put it into the bubble and squeak. My absolute favourite is when I put corn beef into it.
I now make fried bread a slightly different way. I butter two small slices of bread , as you would do for an ordinary sandwich. I then place the slices buttered side down in a frying pan. I only fry one side, so it does not involve unusual amounts of butter. I then make my sandwich with the fried side inside, nice and crunchy, and the plain bread outside, so I am not holding anything greasy. This makes a great breakfast, especially if the filling is mashed hard-boiled eggs. By the way, baked beans on toast (sometimes with a poached egg on top) was one of my favourite evening meals when I was young. Filling and nutritious, and something I could make myself, because my mother was usually working at that time. And in case you haven’t guessed, I am British.

The marching song of the famous French Foreign Legion (Legion Etrangere) is called Le Boudin. This is the nickname the Legionnaires gave to the marching pack they wear on their backs because the black rolled-up sheet that sits on top of the pack resembles a blood sausage, for which the French is Le Boudin, which also translates as Black Pudding. So the marching song of the Legion is actually called Black Pudding!
a full ENGLISH BREAKFAST will set you up for a day if you have a sandwich and a packet of crisps at lunch time then a small tea after work you will have worked most of the calories from what you have eaten in the day by around 8pm that gives you enough time to have a few pints in the pub before bed time and that's why pubs are so popular in the UK
liver is one of the best meats you can get its full of vitamins lambs liver fried with onions then shoved in a pan of veg Brussel sprouts with carrots and peas included and cooked in the oven in a rich gravy then all of that is slapped on some home made mashed potatoes made with milk and salted butter is one of the best winter meals you will ever get
Mustn't forget Bread Pudding and Lardy Cake. Am I alone in finding that, unless you make your own, a decent Lardy Cake is almost impossible to find? Bubble and Squeek and a runny egg, culinary delight. The glory of squre sausage is that it perfectly fits a slice of bread and it's delicious. Some of these dishes are so ancient even their origins are lost to history but they are familiar to me as I grew up in a farming community in the 50s and 60s so they were part of my growing up.
I so enjoy your podcast. I am British and spend a lot of time with my American friend. We often talk about the differences between our two countries. I have to say your programme (or should it be program) makes me realise why we has differing views about so many everyday things.
