Ingredients:
Half a portion of my rough puff pastry Link Rough Puff Pastry
( Or use shop bought puff pastry)
75g currants
60g soft light brown sugar
1 tbsp brandy, (optional)
zest of a small orange
1/4 tsp grated fresh nutmeg
1/2 tsp ground allspice
20g unsalted butter
egg white and granulated sugar for glaze

Eccles cakes used to be a big seller in bakeries in Canada but are nearly impossible to find now, as are private bakeries. Now I can make my own thanks to you. Ta!

Should have flattened them out with a rolling pin, till the currants just peep through the pastry then bake them
