Jerk chicken marinade:
3 spring onions, ( scallions),
2 large cloves garlic
10g fresh ginger
1 scotch bonnet chilli, or as much or little as you like.
2tsp dark soy sauce
1tbsp demerara sugar
1 tsp malt vinigar
1 tbsp olive oil
zest and juice of half a lime
1 chicken bouillon cube
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground black pepper
2 tsp Thyme

Coriander, garlic lime mayonnaise:
1/2 cup mayonnaise

1 large clove garlic
1/4 cup coriander
zest and juice of half a lime
freshly ground black pepper
Add some fine chopped scotch bonnet if you like
