so this must mean i've finally cracked the fiery ginger secret! to make what i'm hoping is a fantastic fiery ginger beer with a malty flavor, plenrty of head and great on a hot day.
take my advise and make this in a brewing bucket! :P

"If you don't want ginger beer, try something else" amazing start of a ginger beer video

I too have been on this quest. I have found that fermenting on the ginger pulp gives the best flavour/ heat. As I'm also a ginger fiend and chilli-head I also add a couple of sliced red chillies and a few black pepper corns. This usually delivers the kick I'm looking for!

Thanks for another video! I once did something similar, but with sugar and turbo yeast - after four weeks it turned out to be something very vigorous, burning, toxic and very strong (~ 20% alcohol). From one (maybe little more) liter I got smashed SO HARD that I completely lost the memory of the previous day, haha.

Made a juice drink of orange juice, pineapple juice, cayenne pepper, and a tonne of ginger paste. Taste great but makes you feel like you got a rocket up your ass for about 10 minutes. Who needs caffeine to wake you up

This real-time “wait 4 weeks until the result” style video really feels like classic YouTube :) love it :D

Try a chilli or 3 when doing your brew. I find it gives a nice mouth feel which works with the ginger

Most important question: what was the % of alcohol in your ginger brew ?

Hope this batch goes well for you. Ginger contains its own bacteria and wild yeasts so might have a touch of funk after 3 weeks, but should be fine otherwise. I've done batches like this with plain sugar and it ends up somewhere between Reed's and Sprite in flavor profile.

hiya started to catch your videos! I have a small challenge: malting! I bought a pack of barley ages ago and tried it and got an "acrospire" same length as the seed. I have hops in my garden, but sadly the whole thing went t*ts up. Got a process? Greetings from wheat beer capital of the world Bavaria!

Im going to try making a ginger beer using the oleo saccharum method - peel and slice you ginger, cover and mix well with castor sugar (at the rate of 150g sugar to 100g ginger). Leave to sit for 24 hours and strain. Use in brew.

Im just a but undecided as to how much ginger to use ....... Im kind of leaning towards a kilo per 5L as an initial test (a lot of fruit wines seem to go for 1kg per 5L, or so ive seen).

Ill let you know!

always be careful of where a person's eyes go when you grate ginger, I think my kitchen had the same units as yours in a previous life, now back to the ginger beer; when I was at prep school they used to brew ginger beer and give it to us a few times a year, I've no idea what the ABV was but can you imagine a couple of hundred half pissed boys (it was a single sex school) aged between 5 and 15 let loose ? those were the days

Do you have any results of this brew?

Since you're using bread yeast instead of a beer yeast, why not go all the way and use Ovaltine instead of the beer enhancer. Led Zeppelin fans know the term, squeeze my lemon, as something else.....
