A couple of people have noticed that the ingredients list states 40 grams of ginger. I only used 4 grams in the recipe but thanks for pointing this out. 😊

If the brew felt a bit bitter...

It's because of over-boiling ginger.
Ginger releases a sweet aroma and manageable kick/sharpness if boiled only for 2-3 minutes. For even better results, boil the water for 15 minutes and add ginger after taking off the utensil from over the flame. You'll appreciate the ginger flavour more then.
Processed sugar releases something like a buttery flavour but the bad kind... If boiled for more than 2 minutes.

For best results don't boil anything in the wine must. Keep the temperature at 80°C.
If you wish to dissolve sugar boil the water then dissolve it after removing it from flame. If still paranoid-then after the sugar has been dissolved, bring the temperature of the sugar dissolved solution back to 80°C.
That temperature effectively kills off anything that will ruin the brew.

When I was a kid, every school summer's holiday I'd make a 'ginger beer plant' in a large jam jar. This included two teaspoons of ground ginger, about 3ozs sugar a squeeze of lemon juice, water to at least halfway up the jar and half a teaspoon of bread yeast. A clean cotton hankie was fastened over with a rubber band to keep the hankie in place. Every day the bubbling jar would be fed with half a teaspoon of ginger and one of sugar. My dad called the lumps of sediment travelling up and down the 'bees.'. At the end of the week a one gallon earthenware jug was filled with hot water and sugar dissolved into it, along with the juice of 2 lemons. The jar contents ('plant') were strained into the jug and all was stirred well. The ginger beer was then put into old RWhites lemonade bottles screwed tightly shut and left somewhere cool and safe to build up pressure, then opened and drank a week later. The remaining sludge in the straining cloth was divided in half, one half returned to the cleaned jam jar for the next batch, and the other half could've gifted to someone else to brew their own. By the end of the summer hols all my friends had them. I am in my seventie and know that this summer treat goes back at least to the 1850's in my family.

It would be interesting to see you put together all you have learned about budget brews, and experiment with a few cheap ingredients. Not necessarily for the lowest price, but give yourself a budget, and make the best thing possible

Note: 12 pence per litre is 22 cents Canadian per litre; and ginger brew is so cloudy it looks medieval; and I mean that as a compliment, my friend - awesome resourcefulness!👍🙂

Just made 23L of reasonable ginger beer. My tips are to use dextrose and light dried malt, quite a lot of lactose and sweeten with Stevia when bottling. It's going taste really, really dry if you don't.

I brew myself "kilju"(check wikipedia page). It's about 13,5€ for 30L of 14%. I could make it also 25L for the 20% at the same price but then it would take 5 days instead of 2 days to brew and also they don't sell that yeast at my local market. So it's just water 30L, super yeast and 7kg sugar for the 14% with this yeast they sell at this moment. It's legal nowadadys here in Finland to brew.

For trivia we call this variation with no added taste VHS which comes from V=vesi(water) + H=hiiva(yeast) + S sokeri(sugar). :) So VHS.

I remember one of my many failed brewing attempts when I was in my teens (it failed 'cos I didn't know what I was doing, too lazy to read up on it, and so just winged it!) - I still lived at home at the time (I'm now in my fifties and learning loads from your videos). I filled a load of (thankfully plastic) bottles with ground ginger powder, water, way too much sugar and yeast, screwed the lids on (tightly!!!) and left in a corner of my bedroom near a radiator. I caught hell for that when there was half a dozen exploded bottles and partially fermented ginger beer all up the wall and across the carpet. My room stank like a brewery.

Ah, happy memories! 🤣
