Another tip to add for freezing. Lay them single layer on a tray and put in the freezer . When frozen a bit transfer to a zip lock. That way they don't stick together in the freezer bag

Simply rinse with vinegar water at it remains white as snoww

I have been freezing yam for a long time, and it comes quite good when cooked. If I may add: We know now that plastics are harmful to our health, therefore, we should minimize the use of plastics particular for freezing. Wrap your food in parchment paper and then freeze it in the zip lock bag.

Yam is the most heartbreaking grocery to buy. 😅 You get home and it is all rotten. Thank you for sharing this ❤

I freeze mine directly after cutting and it doesn’t turn black at all. This pre cook method is a long method and it still turn black . But what I do is that I cook it or fry it frozen and it’s as fresh as the first day . It can also be stored as long as 1 year without pre cooking .

This is called blanching. It stops enzymatic reactions that can cause discoloration

I have been freezing yam, after cutting for over 35 years when we bought yams in heaps from Zakibiam . It never turned black. Always fresh and clean. I still do same here.

I truly love the last phase of it. Poundo yam in a minute.👍🌹

I'd usually just slice and freeze with skin on. Then boil from frozen - with skin on. A 20-minute will normally be reduced to only ten minutes and walai the skin just falls off - no need for peeling. Imagine how chuffed I also felt when, after boiling for 20 minutes, the yam turned into mash, and after pulling out the droped skin, I used ọmọrodo (ladel) to turn it into poundeded! Kai. Walai. these hacks sweet me 😊

From the US, thanks for the information; that was my first time of seeing some imformative video about yam. It would be of a great interest if you could some day come across some information on how to detect rot in yams and other tubers. It's amazing that no universities in West Africa has been able to research the problem of rot in yams with the goal of eliminating or, at the least, detecting them.
