That meat you are asking about is called Skilpadjies. Skilpadjies is a South African delicacy of spiced lamb liver minced with onion, herbs, and seasoning, then wrapped in caul fat (netvet) and traditionally grilled on a braai until crispy, resembling tiny tortoises.

So when they keep saying  "don't be a doos, be lekker" - it means "don't be an arsehole, be kind"

Those are skilpadtjies, pronounced skill pie keys. It is lambs liver wrapped in a lambs stomach casing. The casing is very light and crispy when it's cooked on a braai. 15:27

1 large onion, finely chopped

1 tsp ground coriander
