"90% of my customers are regulars."
"What about the remaining 10%?"
"Oh. They are FUTURE regulars."

"Maybe it doesn't matter if we don't make a profit, right?"....
... "As long as I can make a living".

Wow! Hats off to the chef!

To be greeted at the door and served a hearty meal may seem small, but it’s a simple rhythm that may be someone’s reason for waking up that morning

The real mvp here is the wife. She serves, cooks, cleans, take the kids to and from school AND she also has a day job. Massive kudos to this trooper of a woman

Japan is so clean, and people really put an effort into keeping quality as high as possible.

There are a lot of hard working restaurant owners who sacrifice their sleeping hours to run their hotels to serve good food in odd hours. On one side it looks good because they are doing it for the community, in the other side it feels sad that it might be affecting their health due to improper sleep. I wish all these type of restaurant owners and staff good health.

2:40 “coordinate your outfit” 😂 probably a bad translation of “make the dressing”

I like how its mistranslated here and there. It adds this raw, unfiltered, unedited documentary feel

When you click on a video you think is like a minute long but it's almost half an hour

You can see that he has BIG pride in his profession. This seems to be the norm for many small shops in Japan. I love the mentality of the Japanese people.

this kitchen is INSANELY clean, like I think that the ingredients they use show that it's not a fancy place, it's a regular eatery for ordinary workers but to do this almost profitless job and maintain such cleanliness and level of service is unheard of. kudos to the owner and his wife, I feel like he fully understands that it's gonna go thankless and still does it anyway. I couldn't give them higher respect for what they do

I have so much respect for this family. The food looks incredible, 90% regulars means the food is ACTUALLY incredible and the owners are humble. I honestly want to take a plane to go try this place out. Maybe one day I'll be blessed to travel there and try a meal or two. God those bowls look unbelievable.

this shop is incredibly clean

I wouldn't expect this small kitchen to be so clean. Warm hearty food, made with care.

It is my night shift at a factory, i watched this on my lunch break. And somehow i feel happy for those people. So much warmth in their hearts. And it kinda make me happy a little too. Thank you.

i had to pause the video because i was laughing out loud, this is the funniest mis-translation of the video

“THE SAVORY BROTH WARMS MY CHILLED BODY” 🗣️📢🙊

I'll be 39 in a few months, been working in kitchens since I was 16. When she said that it's tough but fun (working in the kitchen) but hearing someone say they loved your food, or they send back a clean bowl...that's what its all about for me too. I've been doing this for so long, but every time I hear that from a customer, I am immediately filled with a sense of joy and accomplishment. I'm writing this place down just in case I ever visit Japan. Dang this looks amazing.

I love this. Everyone is so respectful keeps everything clean gives their plates back when they're done. I wish America could be like this everywhere.

These selfless people who sacrifice so much to feed others just to see them smile are the heart of Japan.
