For lunch: miso soup and cold somen, with myoga, shiso, and pickled plum.
My mom used to make somen before leaving for work. It was always a little mushy by the time I ate it.
It wasn't until I started making it myself that I understood how good fresh somen really is β and how much she did for me in the little time she had.

π΅ Miso Soup with Daikon & Eggplant
Ingredients (1 serving)
γ»Daikon β ΒΌ piece, cut into quarter-round slices
γ»Eggplant β 1, cut into bite-sized pieces
γ»Aburaage (thick-fried tofu) β as needed
γ»Powdered dashi β to taste
γ»Miso β to taste
Instructions
β Add daikon to boiling water, then add eggplant.
β‘ Add powdered dashi and simmer until vegetables are cooked through.
β’ Add aburaage, dissolve miso, and done.

Ingredients (1 serving)
γ»Somen noodles β 1 bundle
γ»Black vinegar mozuku seaweed β 2 cups
γ»Frozen okra β as needed
γ»Myoga ginger β sliced
γ»Shiso leaves β as needed
γ»Pickled plum (umeboshi) β 3, pits removed and mashed
Dressing
γ»Mentsuyu β 3 tbsp
γ»Ginger β to taste
γ»Sesame oil β 2 tsp
γ»Water β 50ml
Instructions
β Prepare toppings: slice myoga, tear shiso, remove pits from pickled plums and mash.
β‘ Cook somen, then rinse well in cold water to chill.
β’ Mix mentsuyu, ginger, sesame oil, water, mozuku, okra, and the prepared toppings together.
β£ Pour over somen.
