I really admire  those sharp Japanese knives.

Thats the cleanest shop i can remember in your channel, but admittedly I would eat in almost every shop that you have shown us!

All I want to do now is to quit my corporate job and move to Japan and become a ramen cook.

So satisfying to see them work organizedly.

I believe the women are using slotted fish spatulas to stir fry with. Normally, those spatulas are used to lift up a piece of fish, of course. But, they've cleverly adopted a new use for them. With two, one in each hand, they have precision in their cooking (getting a good mix). Although, when plating the fried rice, they can't achieve the scooping motion with the usual concave work ladle. And, they can't form that little round mound of rice. But, it doesn't really matter in the end. The fried rice is undoubtedly good.

Mamma knows how to flip that wok. 😊
