In my house, and in most of the houses on my road, the bird on the Christmas table was not a turkey. It was a hen. A big old laying hen that had stopped laying, baked whole with dressing beside her, and that was Christmas dinner for a family of nine. Turkey came later, when it got cheap and when everybody started seeing the same picture on the same television.

I grew up outside Greenwood, Mississippi, one of seven children, and I cooked in other people's kitchens for thirty four years. Every single dish on this list was on a table I sat at or cooked for.

In this one I give you all twenty old fashioned Southern Christmas recipes and soul food holiday dishes, and what happened to each of them. The packet inside the bird that most people throw straight in the trash on Christmas morning and the whole dish that was made from it. Candied yams before a marketing pamphlet put marshmallows on them. The baked macaroni that sets like a custard and can be cut in squares, and why yours slumps. The cake that took three days on purpose. The candy you cannot make on a humid day. And the potato salad, and the quiet politics of who in the family was allowed to make it.
