► SPONGE CAKE
● 250g Unsalted Butter
● 200g Plain White Sugar
● Lemon Zest (I used zest from a large lemon)
● 5 Large Eggs
● 250g All-Purpose Wheat Flour
● 2.5 tsp (11.5g) Baking Powder or Baking Powder
● 60ml Elderflower Liqueur (if you can't find it, you can substitute it with a citrus liqueur of your choice, such as limoncello)
► SYRUP
● 50ml Water
● 50g Plain White Sugar
● 1 Tbsp Elderflower Liqueur
► SWISS MERINGUE BUTTERCREAM
● 150g Egg Whites (4 large eggs)
● 300g Plain White Sugar
● 450g Cold Unsalted Butter
► LEMON CURD
● 120g Plain White Sugar
● 60ml Lemon Juice
● Lemon Zest (I used zest from a large lemon)
● 3 large Eggs
● 80g Cold Unsalted Butter
