Today, I’ll show you how to make Nanban-zuke (marinated fried dish) using canned mackerel. This recipe is quick and easy—no deep-frying required! The mackerel absorbs the flavors beautifully, pairing perfectly with the refreshing vegetables to create a dish that goes great with rice. It’s also perfect for making ahead of time, so please give it a try.

【Ingredients】 (Serves 2–3)
・Canned mackerel: 1 can
・Onion: 1/2
・Carrot: 50g
・Green bell pepper: 1
・Red chili pepper: 1
・Vinegar: 4 tbsp
・Soy sauce: 2 tbsp
・Mirin: 2 tbsp
・Sake: 2 tbsp
・Sugar: 1.5 tbsp
・Potato starch: Appropriate amount
・Salad oil: Appropriate amount
【Instructions】
1. Thinly slice the onion and place it in a storage container.
2. Julienne the carrot and add it to the container.
3. Remove the stem and seeds from the green bell pepper and slice thinly; remove the seeds from the chili pepper and slice into rounds.
4. Combine soy sauce, mirin, sake, sugar, and vinegar in a small saucepan, bring to a boil, and pour the mixture over the vegetables in the container.
5. Drain the liquid from the canned mackerel and coat the fish with potato starch.
6. Heat oil in a frying pan and cook the mackerel until browned.
7. Add the green bell pepper, chili pepper, and mackerel to the container with the marinade and mix. Let it cool down, then chill in the refrigerator to finish. -----------------------------------------------------------------------------------------
