If you're looking for the ultimate cozy, budget-friendly weeknight dinner, this Italian braised cabbage with white beans is about to become your new obsession. Tender, slow-simmered cabbage is braised in a rich, garlicky tomato base until it turns silky and deeply savory, the kind of humble, peasant-style Italian cooking that punches way above its weight. Creamy cannellini beans make it hearty and satisfying enough to stand alone as a vegetarian main course, while a golden, crispy breadcrumb topping adds irresistible crunch to every single bite.
This easy one-pan Italian cabbage recipe is the perfect example of cucina povera, the traditional Italian "poor cooking" that transforms the simplest, cheapest ingredients into something truly extraordinary. Whether you're searching for healthy cabbage recipes, easy bean dishes, vegetarian Italian recipes, or just a cheap and filling dinner idea the whole family will love, this dish checks every box. Crunchy breadcrumbs and a generous snowfall of Parmesan cheese finish it off in the most outrageously delicious way. Cheap, simple, and absolutely packed with flavor, this one is a keeper.
INGREDIENTS
• 8 cups green cabbage, sliced ¾ inch thick
• 1 medium onion, thinly sliced
• 6 garlic cloves, 4 minced and 2 sliced
• 1 can (15 oz) cannellini beans, drained and rinsed
• 3 tbsp olive oil
• ¼ tsp crushed red pepper flakes
• 2 tbsp white wine vinegar
• 2 tsp anchovy paste, or 2 anchovy fillets
• 4 tbsp tomato paste
• 1½ cups chicken broth
• 1 cup panko breadcrumbs
• Salt and freshly ground black pepper
• Fresh grated Parmesan cheese, for serving
• Fresh parsley, finely chopped, for serving
1. Heat oil in a high-rimmed sauté pan with a tight-fitting lid over medium heat, then add thin slices of onion and cook for a few minutes until soft and lightly caramelized.
2. Add minced garlic, crushed red pepper flakes, anchovy paste, salt, and freshly ground black pepper to the pan, cooking for 20 to 30 seconds until fragrant.
3. Stir in tomato paste and cook over medium heat for 1 to 2 minutes to caramelize the mixture and cook out the raw tomato flavor.
4. Add a small handful of shredded cabbage and toss it into the tomato paste mixture to soften and begin caramelizing.
5. Fill the pan with the rest of the shredded cabbage, pour in a cup of chicken broth, cover with the lid, and let it steam for 10 minutes to reduce in volume.
6. Uncover and stir everything together, scraping up from the bottom to evenly coat the cabbage in the tomato-onion mixture.
7. Pour in a couple of tablespoons of white wine vinegar, then cover and cook over low to medium-low heat for 30 to 45 minutes until the cabbage is tender, uncovering to stir every 15 minutes.
8. In a separate cold pan, combine breadcrumbs with olive oil and toast over medium heat, stirring frequently.
9. Microplane or finely grate garlic directly into the breadcrumbs as they toast, stirring constantly to prevent burning, then remove from heat and season with a pinch of salt.
10. Gently fold drained and rinsed canned cannellini beans into the tender cabbage mixture, cover, and let simmer for 5 minutes to heat through.
11. Top the dish with the crispy garlic breadcrumbs, freshly chopped parsley, and freshly grated Parmesan cheese before serving.

Watching it back, I can see that I wasn’t as clear or polished as I would have liked during this particular shoot. I do use filler words sometimes, but this video was definitely more noticeable than usual, and I understand how that can be distracting when you’re trying to watch and enjoy the content.
I appreciate the feedback, and I’ll make a more conscious effort to clean that up in future videos.
That said, I also want to be honest: I work two jobs, wake up at 4:45 AM most days, and I was really exhausted when I filmed this one. That’s not an excuse, just some context. I make these videos for free because I genuinely enjoy sharing recipes and helping people cook better at home.
So thank you to everyone who watches, supports, and gives constructive feedback. I’ve heard the comments on this one — from the last 100 people — and hopefully this saves someone from feeling like they need to let me know again.
I’ll do my best to improve going forward.
