After testing dozens of air fryers, cooking methods, oils, liners, chicken wings, fries, vegetables and more, I realized that most air fryer advice comes down to one simple principle: managing surface moisture.
In this video, I put that idea to the test.
We test:
Overcrowded vs. spaced-out French fries
Wet vs. dried chicken wings
No oil vs. light oil vs. too much oil
Why shaking and flipping actually matter
How air fryer liners affect airflow
Whether higher temperatures really make food crispier
High heat vs. lower heat using roasted broccoli
The biggest lesson? Your air fryer isn't just heating food. Hot moving air is also helping remove moisture from the surface of your food—and understanding that changes the way you think about overcrowding, oil, airflow, liners, cook time and temperature.
Instead of memorizing dozens of random air fryer rules, remember three things:
1. Surface moisture — How wet is the food, and would a little oil help it brown?
2. Airflow — Can hot air reach the surface, or is the food stacked, crowded or covered?
3. Heat + time — Are you giving the inside enough time to cook while still getting the outside crispy?
Once you understand those three principles, getting crispy air fryer food becomes a lot less mysterious.
