Spring is finally starting and the rhubarb season has started as well. To celebrate I made this lovely rhubarb and white chocolate dessert. It’s different preparations of rhubarb with white chocolate mousse, lemon thyme pate de fruit and a white chocolate sorbet. All great recipes, so enjoy guys!

Your videos are excellent, and your cooking is very creative. In fine dining we often see remarkable creativity in amuse-bouches, starters, and desserts. The real Achilles’ heel, however, is often the main course. That is where things frequently become predictable, and far too often kitchens fall back on lamb or duck with heavy seasoning to create excitement.
Yet there is so much more that could be done, especially with beef beyond the classic Wellington. On your channel there also seem to be relatively few recipes that focus on main courses. Perhaps you might enjoy demonstrating your creativity in that area as well.
