Recipe for 3 baking sheets of cream rolls
Quick Puff Pastry (double serving)
✅Butter - 400g 82%
✅Flour - 600g
✅Salt - 0.5 tsp l
✅Ice water - 150 ml
✅Eggs - 1 or (3 small yolks)
✅9% vinegar - 1 tbsp
Protein-choux cream "Italian Meringue"
✅Egg whites - 100 g (4 egg whites, but it's better to weigh them)
✅Sugar - 250 g
✅Water - 70 g
✅Vanilla sugar - 1 packet
✅Citric acid - 1/3 tsp
This cream is 100% pure, airy, shiny, stable, and won't run. It keeps well and can be added to desserts and used to decorate cakes.
