Β½ lb ground beef β’ 1 can sliced mushrooms, drained β’ Β½ cup sour cream. Brown the beef well, stir in mushrooms, then turn the heat OFF, rest 1 min, stir in sour cream. A splash of milk if it feels thick.

2. NO-PEEK CHICKEN & RICE (makes 2 dinners)
4 chicken thighs β’ 1 cup rice β’ 1 can cream of mushroom soup + 1Β½ cans water. Stir rice, soup & water in a baking dish, thighs on top, foil crimped TIGHT, 350Β° for ~1 h 15 min.
π Secret: no peeking β the trapped steam is what cooks the rice. Rest 5 min covered after.
3. KIELBASA, GREEN BEANS & POTATOES (serves 2)
1 turkey kielbasa in coins β’ 2 potatoes in small bite-size pieces β’ 1 can green beans + half its liquid. Water to almost cover, lid on, simmer ~20 min.
