All of the plants mentioned have flowers above the surface of the soil. But there's one that even blooms below the soil surface: Rhizanthella (an orchid). It comes up just shy of the surface and opens up to expose its flowers to the air, but the flowers are below the surface.

I'm not a botanist but in my mind I think of a plant in terms of the cell structure and kind of the anatomy of the whole plant, and in my mind the definition pretty much is tissue structure and cell walls being so distinct from fungus and animal. I never thought of plants being defined by their role or function per se, or even by the chlorophyll.

I live in the desert, and I actually see plenty of photosynthetic plants that aren't green, or are barely so or only occasionally so, or lack leaves either always or frequently.

Many stonecrops are reddish, both the santa rita prickly pear and the purple heart plant are very much purple and even aloe is often purple to peach, our green leaves are usually are a sagey blue green and sometimes they are nearly light gray, there are plants like cacti with spines instead of leaves and while they are typically green they can also be completely covered in white fuzz, the paloverde often drops all its leaves and has green trunks and branches but as it ages these turn grayish or golden brown in spots. There are also tropical plants that are such a dark green that they look black. And all of these photosynthesize, they just are either blocking extra sun they don't want or are trying to get extra in the case of the tropical ones.
