Last year I took my kids hiking at a cabin for Thanksgiving. I pre cooked everything because I wasn't sure of the cooking arrangements. I made a $4.99 turkey loin, and sides for less than $15 for 4, packed in In a foil tin as well as 3 other dinners for the weekend. All in 4 of us ate for the entire trip , snacks, drinks, wine...for less than $100. It can be done.

I never cease to marvel at what you can accomplish with a strict budget. I enjoyed the narration as you considered every flavour of cake mix 😄 I was rooting for spice which I think would have a nice autumnal flavour. Lemon and cranberry is classic though.

Good job, girl! That cranberry cake looks delicious.

When I was growing up we always had chicken and cornbread dressing, potato salad, canned corn and peas, and homemade gravy. This was the 60s, and I’m sure my mama never overspent for the dinner. It was simpler then! ❤ Happy Thanksgiving!

I was literally salivating while you prepared the cranberry/lemon sauce!!!

Excellent choices especially the whole chicken. I watch a lot of these Thanksgiving meals spending a small amount, and I always think that instead of chicken parts, or canned chicken a whole chicken is the closest to a traditional turkey, and can be purchased fairly cheaply. Everything looked yummy.❤

Can of pumpkin pie mix, 1 carton of cool whip generic, fold together, refrigerate. Dust top lightly with nutmeg or cinnamon and a light drizzle of honey or maple syrup.
Dessert!

I love having Thanksgiving day alone. I eat what I want, and it's never turkey. This year it's going to be roast beef and mashed potatoes, peas (cooked from frozen), and a keto dessert. Homemade keto "bread," and a keto mug cake for dessert. No pressure, I get to eat when I want, I don't have to worry about who's going to hate what, I only have to be super careful htat there are no allergens in my food (severe food allergies means I don't eat what others cook, ever).

Oh, I don’t think I’ve ever done an herb 🌿 infused brine. What a good idea.

I love your calm practical commentary. So relaxing. Great meal. Yummy 🥰

I'm actually going with a frozen meal this year. It's not a holiday here in Australia but I just use it as an excuse to have a turkey dinner.

This is almost exactly what we do....except we also make a broccoli and rice casserole and deviled eggs.

Morning Michelle, Yes, brining the chicken does make a difference. My mother-in-law used to soak her chicken in buttermilk for tenderness. Thanksgiving can be done less expensive, you proved that, the dessert looked wonderful. Have a great week. Charlotte

Try making a compound butter with your ingredients. Mix butter, chopped garlic, lemon zest, lemon juice, and your herbs- add salt and pepper. Slather all over chicken including under the skin! You will impart even more of all those good flavors.

Add your herbs, garlic etc when brine is hot, before adding the cold water and ice, thats how you get the most flavor, not once cooled.

Thank you! I love lemons and cranberries and will try your ideas.
