Answering common questions we didn't get to in the vid:
1) What kind of cooking oil?
My dad has always used canola/veggie oil for this and most dishes, but recently he's been using peanut oil. Most oils work! You can also use sesame oil (although I probably wouldn't add 1 tablespoon of it.) In a lot of dishes we always add sesame oil as we're finishing it, since sesame oil's flavor degrades in high heat. However, these eggs come together in around a minute so the sesame oil should be fine.
2) Why did we use 3 eggs for the control batch?
A few reasons - I thought it'd be more helpful to show the difference in cooking times for 3 eggs vs 5 eggs. Next time if we do a comparison I'll just make the amount the same to avoid confusion. The unseasoned egg batch was mostly just to have something to bite into where we could discern the differences in texture and taste. Although it would be pretty interesting to see if the same amount of eggs ends up being voluminous with the added ingredients!
3) What about cornstarch?
I personally had never heard of this method and my dad never brought it up during the shoot, but I will definitely ask him in a future vid and for our cookbook! More egg videos to come!
