I forgot to buy the masa for todayโs arepa special, so lunch took an unexpected turn. I tried semolina insteadโand, to my surprise, I liked the result even more.
Come along for another raw, uncut stretch in my UK canteen kitchen. We bring the delivery upstairs, sort it in the walk-in fridge (a part of the job I havenโt shown you before), then get stuck into the prep. For the special, I served the savoury semolina โarepasโ with pork or chicken, tortilla chips, salsa and a thick sauce I called Mexican gravy.
Thereโs plenty of chopping, prep and quiet kitchen time before lunch service. Thatโs the point of these videos: youโre there for whatever the shift brings. ๐๐๐

I would call anything make GREAT food. I don't use semolina so I can't really comment.
Wow that sure was a large and very heavy supply order... I hope your company hires someone to go to the loading docks and bring the order up to where you can break down the inventory and store it logically in your stores area.
