🌾 INGREDIENTS

• 420 g / 14.8 oz / about 3 1/3 cups bread flour (11.5–13% protein)
• 5 g / 1 2/3 tsp instant dry yeast
• 295 ml / 10 fl oz / about 1 1/4 cups water
• 6 g / about 1 tsp salt

💡 IMPORTANT FLOUR TIP

For the best result, use strong bread flour with approximately 11.5–13% protein.

Strong bread flour helps the dough develop a good gluten network, hold the gases produced during fermentation, and rise instead of spreading too much during baking.

⏱️ RESTING & BAKING TIMES

• First rest: 40 minutes
• Folding: 1 set only
• Bulk fermentation: approximately 90–120 minutes, or until doubled in size
• Rest after dividing and shaping into balls: 10 minutes
• Final proof: 30 minutes
• Baking: 25–30 minutes

🔥 BAKING

Preheat the oven to 220°C / 430°F.

Bake using top and bottom heat for approximately 25–30 minutes.

💨 For a beautiful crispy crust, place a heat-safe bowl of boiling water on the bottom of the oven to create steam.

The combination of strong bread flour, proper fermentation, steam, and high heat helps create that beautiful crispy baguette crust. 🥖
