In today's episode, I visit a unique place in Podlasie – Siedlisko u Gąski in Idźki-Wykno (Sokoły Commune). The hostess of this charming spot, Mrs. Ania, takes us on an extraordinary journey back to the flavors of childhood and ancient rural traditions.
We begin our gathering by preparing a real, rustic breakfast outdoors. Mrs. Ania cooks on a historic tiled stove called a Westfalia, which imbues everything with the unique aroma of a live fire. Warming linden blossom tea, picked straight from the village tree, appears on the table. We sample homemade pumpkin soup made with fresh milk and delicious mashed potatoes. The hostess also offers us 100% sourdough rye bread, baked with flour from a local, organic mill in Dolistowo. There was also a traditional Podlasie snack: bacon with onion and vinegar, as well as delicious scrambled eggs with homemade bacon. At my request, Mrs. Ania fried homemade pancakes with plum jam on a baking sheet. Finally, we baked crispy flatbreads from bread dough and brewed coffee in an old-fashioned espresso machine.
During the visit, we also met the animal inhabitants of the habitat: Balbinka the goose and her flock, chanterelles, a duckling, Juszka the pig, and the faithful dogs Rokunia and Kiki. We also visited an old barn transformed into a veritable museum of rural souvenirs and handicrafts. Mrs. Ania also talked about her famous crackling cookies, which have been officially included on the List of Traditional Products of the Ministry of Agriculture and Rural Development.
