Today I was making stroganoff for lunch and it reminded me of something: when I was a child, I thought STROGANOFF WAS RICH PEOPLE'S FOOD! 😂
And then I started remembering several other things that used to seem like a real sign of wealth: having a phone in the bedroom, two televisions at home, a refrigerator that didn't build up ice, air conditioning, ordering pizza, traveling with the family to the beach at the end of the year… 😂
Some of these things seem so normal today that we don't even remember that we once dreamed of having them!
So come make lunch with me, laugh, and remember a time when even drinking soda during the week seemed like a luxury! 😂❤️
And the stroganoff? It was AMAZING!
500g chicken breast, cut into small cubes
1/2 chopped onion
2 cloves of chopped garlic
2 tablespoons olive oil or coconut oil
2 tablespoons tomato sauce (preferably homemade or sugar-free)
1 tablespoon mustard (sugar-free)
200g light ricotta cheese, light cream cheese, or light cream (or cashew cream for a lactose-free version)
1/2 cup water or freshly squeezed chicken broth (if needed to adjust the sauce)
Salt, black pepper, and curry to taste
Chopped parsley and chives to taste
Preparation Method
Brown the chicken: In a large pan, add the oil and sauté the onion and garlic until golden. Add the chicken cubes, season with salt and pepper, and cook until the chicken is browned and releases its own juices.
Thicken the sauce: Once the chicken is cooked, add the tomato sauce and mustard. Stir well to incorporate the flavors.
Creaminess: Lower the heat, add the light ricotta cream (or the cream of your choice) and water. Mix gently until you obtain a smooth and creamy sauce. Let it simmer for 2 to 3 minutes (do not let it boil too much so the cream doesn't curdle).
Finishing: Turn off the heat, adjust the salt if necessary, and finish by sprinkling with parsley and...
