Did you experience Tex-Mex?
Tex-Mex which is a regional fusion of Mexican and American (Tejano) cooking styles born in Texas.
The most famous Tex-Mex dish is Fajitas are widely considered the most famous Tex-Mex dish. These grilled strips of skirt steak or chicken, cooked with bell peppers and onions, are famously served sizzling on a hot cast-iron skillet alongside warm flour tortillas, cheese, guacamole, and sour cream.

Eating fajitas is an interactive, hands-on experience. To build and enjoy them correctly, take a warm tortilla, spread a thin layer of soft toppings like guacamole or beans down the middle, add your sizzling meat and veggies, fold the tortilla in half like a taco. Do not roll it like a burrito. Hold it with both hands, using your pinkies to tuck and secure the bottom so the filling doesn’t fall out. And,  eat it with your hands.

Top options to pair with your sizzling fajitas include:
1. Classic Margarita: The sweet, tart, and salty profile cuts right through the richness of the meat.
2. Mezcal Mule: Brings out the natural char and smokiness of grilled fajita veggies and meats.
3. Mexican Cerveza (Lager): Light, crisp beers refresh the palate from spicy jalapeños, while darker beers (like Negra Modelo) match the savory weight of beef fajitas.
4. Michelada: A spicy, savory beer cocktail loaded with lime and tomato juice that pairs beautifully with grilled flavors.
5. Horchata: A creamy, sweet rice milk drink that instantly soothes the heat from bold fajita spices.

Other essential Tex-Mex dishes include:
Chile con Queso: Often simply called "queso," this is a smooth, melted cheese dip blended with chili peppers, onions, and tomatoes. It is a quintessential starter at any Tex-Mex restaurant.
- Austin Monthly Magazine

Chili con Carne: The Lone Star State's official dish. It is a hearty, spicy stew made of chili peppers and meat (usually ground or cubed beef), famously made without beans in traditional Texas style.
- Serious Eats

Enchiladas: While Mexican in origin, Tex-Mex enchiladas are famous for being heavily smothered in chili gravy and melted yellow cheese (often sharp cheddar).
- Beef Loving Texans

Breakfast Tacos: A massive cultural staple in Texas. These are fluffy scrambled eggs wrapped in a flour or corn tortilla, typically loaded with cheese, bacon, chorizo, or potatoes.
