Not British but Irish fella here, this came up in my algorithm and found this video to be so refreshing. Food content, specifically for barbecue, across the various platforms is very American-centric. Our cuts here are different, are tastes here are different, our ways of cooking using charcoal/wood outside are different. This was a fantastic translation of something from another culture to be more grounded in another country, and lots of items you showed apply over here in my neck of the woods too. Thanks for all the work you put into this as it's a really engaging watch, and I imagine for American barbecue homies they might be curious to see what we can even get our hands on over in Northwestern Europe!

I've made pulled pork in the oven a few times and though it comes out good (it's a slow-cooked tough cut of meat, no surprise there that it came out good) but am very curious to replicate some of things you've prepped here, namely the pork belly "burnt-ends" with that glaze, the pulled pork and the beef ribs. Thanks a mil again, very curious what sides your guests brought to have with this tray!

I’m a butcher in the uk great video but supermarkets should be ashamed of that pork shoulder that’s shocking I get customers who want briskets for smoking and I can butcher it Texas style leaving it flat I butcher it the same way you and chudds bbq do it and they love it and it Aberdeen Angus so Got some nice marbaling  and fat

Those beef ribs looked decent. Sainsbury's do the same thing - a pack of 2 giant ribs separated into single portions. Always look through the selection because there are always some lean ones in there, but some of them have insane marbling - it looks almost like wagyu to me. Whenever I see a good example I pick it up, and I now have 3 packs lined up in my freezer, ready for the smoker.

Great to have a UK influence to my usual watch. When I first started, I got so confused by UK brisket because it looked nothing like our US friends had. Great video, thanks.

This is EXACTLY the video I’ve been looking for. I have an intense interest in Texas style BBQ. Where I am in London it’s mostly halal butchers everywhere. Can’t find a lot of the beef and pork cuts there. So I’ve had to resort to supermarket meat in most instances.
