The Steak and Stilton Bake is back, and this homemade version is packed with tender beef, rich onion gravy and pockets of melted Stilton.
It’s wrapped in flaky golden puff pastry and finished with a crisp black-pepper crumb.
The secret is keeping the filling dark, thick and properly beefy rather than turning it into a blue-cheese sauce. I slowly cook diced steak with golden onions, beef stock and Worcestershire sauce, then add small pieces of Stilton when assembling the bakes.
The result is crisp and flaky outside, with recognisable pieces of tender beef and just enough melted Stilton inside. If you enjoy a good steak bake, this is certainly one worth making.

Prep: 25 minutes
Cooking: Approximately 1 hour 45 minutes, including the filling
Oven: 220°C / 425°F conventional, 200°C fan, Gas Mark 7
Ingredients
Beef filling
   • 700g diced braising steak — approximately 2¾ UK cups or 3⅓ US cups
   • 1 tbsp vegetable oil
   • 1 medium onion, sliced — 150g
   • 1 garlic clove, crushed — 5g or 1 tsp
   • 1 tbsp tomato purée — 15g
   • 2½ tbsp plain flour — 20g
   • 300ml strong beef stock — approx 1¼ US cups
   • 1 tbsp Worcestershire sauce
   • 1 tsp dried thyme
   • ½ tsp freshly ground black pepper
   • ¼–½ tsp salt
   • 80g Blue Stilton, broken into small pieces
Pastry
   • 2 × 320g ready-rolled puff-pastry sheets
   • 1 medium egg, beaten
Black-pepper crumb
   • 30g panko breadcrumbs — approx 6 tbsp,
   • 8g plain flour — 1 level tbsp
   • 15g softened butter — 1 tbsp
   • 1½–2 tsp coarsely ground black pepper
   • ¼ tsp salt — approximately
