Today I'm sharing a super soothing and easy 2 portion creamy pasta dish made with ground turkey in the Instant Pot Mini 4Qt 3.8L. This is one of new favourite quick recipes and it's perfect for beginners too. In the video I go through all the steps for making this dish in detail so if you are new to the Instant Pot, you can learn some key techniques like how to avoid the burn notice and how to adapt the steam release for some dishes so it is somewhere in between Quick Release and Natural Pressure Release. 📋 Recipe Ingredients (serves 2-3 )
1-2 tbsp Olive Oil
1 small to medium onion, chopped
1-2 carrots,diced small
1/2 to 1 celery stick , chopped
200 - 250g (7-9oz)ground turkey mince
180g (6.25 oz) small dried pasta shapes like macaroni (I used De Cecco Chifferi Rigati)
500 mls (2 cups) of good quality stock
1-2 Tbsp tablespoon of balsamic and sun dried tomato puree (or any tomato paste with some flavour)
1/2 a wheel of Boursin or another herby/garlic creamy cheese (a mature sharp cheddar also works well)
Timing and Tips
Pressure Cook: 4 mins High Pressure then wait 1 minute Natural Release then Quick Release until pink pin drops. Stir well to release starch from the pasta , adding the cheese.
Tip:
*If too runny: use saute to evaporate out any excess water
*If too dry, add some extra stock or milk/cream to your taste.
Optional: fresh herbs like basil always perk up these simple dishes if you have any. Extra parmesan is a delicious cheesy optional too!

Some of the key steps in this recipe are:
• Deglazing well before pressure cooking
• Not stirring after adding the tomato paste
• Waiting for 1 minute before Quick Release
If it looks slightly loose when you open the lid — that’s normal. It thickens as it sits (or pop onto saute to bubble off any extra liquid)
