the onions are chewy,
and the curry is rich but lacks savory flavor.

With this one video,
The reason for extracting broth without the gamey chicken smell
The reason for grilling the chicken skin first
The real reason curry becomes gritty
The structure of sweetness without sugar
I've organized it all so you can understand it.
A curry that leaves you wondering, "Why do I do it this way?"
Try making it tonight.
