Greek Cabbage Salad
1 tsp salt
1/2 tsp black pepper
3 Tbsp red wine vinegar
1 1/2 Tbsp dried dill weed
1 tsp dried oregano
1/3 c olive oil
1/4 c finely diced black olives
1/4 c finely diced pimiento stuffed green olives
handful of green onions, finely diced (green parts only)
1/2 c great quality feta cheese, crumbled
1 small head of cabbage, very thinly sliced/shredded
In a large mixing bowl combine the ingredients in the order listed, stirring well after the olives are added. Once everything is in the bowl, toss well to coat everything evenly and store, covered, in the fridge until ready to serve. This is best made a few hours before serving. Enjoy!
