Anthony Bourdain opens this one by admitting what he wanted from it: to get away from it all, coast gently into another season of television, no sharp edges. It is late summer 2015. Greece is weeks past a referendum, the banks have been shut, and the headlines are about bailouts and refugees washing up on Aegean beaches. He picks Naxos, the largest of the Cyclades and the one nobody puts on a poster, rents a villa, and plans to cook, nap, swim and think about very little.

The island does not entirely let him. Naxos is one of the few places in Greece that was never only a tourist economy — 130,000 goats and sheep, half the population still farming, a rooster slow-cooked in red sauce at a family farm bought by someone’s great-grandfather in 1901. But the crisis reaches even here. A fisherman called Fearless George explains that the EU is offering buyouts to small boats, paying men to stop fishing so the commercial fleets can take the water. A quarter of the country is out of work and forty per cent are near the poverty line, and yet tourism is rising, because a broke country is a cheap holiday. Over raki at a village table, Tony gets the Greek account of how it happened: a state built on foreign loans from the day it was founded, politicians who took and never gave back, and the stereotype of the lazy Greek as a very convenient story for the people doing the lending.

Underneath all of it runs a quieter thread. Alone in a beautiful rented house, Tony asks the question that follows him through the whole hour: is it worse to be somewhere awful by yourself, or somewhere really nice that you cannot share with anyone? Everywhere he goes, the answer is sitting right in front of him — a mountain village in Apiranthos feeding a stranger by hand at a send-off party, three generations around a farm table, a fisherman’s son ladling soup on a boat. By the last sunset, somebody at the table gives him the only piece of advice the episode really needs: don’t tell me what you ate, tell me who you ate with.
