The embezzling brother is probably the worst person on Kitchen Nightmares; he f'ed over his brother so badly and then had the bronze face to act like his brother was holding a grudge over something minor.

I grew up in a small city with 4-5 family-owned and operated restaurants/diners. AMAZING food, both Canadian and European and 1 middle-Eastern. One by one they failed as the original owners passed or retired; some doing ok with the second generation running them, NONE making post the the 3rd.

I don't know anything about the restaurant business,but I sort of know about food waste ,or preventing it.First of all you have to try and accurately figure how long a product will be used.I know it might be a little time consuming and not perfect,but a lot of these places should used vacuumizing.Wether in jars,bags or plastic or glass containers.
