Such a cute idea for any knitters in your world - or possibly for markets you are going to be showing at. Ensure that the needles you are using are metal - the plastic ones won't flatten as you need.
I like to brighten mine with coloured Mica powders and used Fusion's Mineral Paint (an all in one paint) to highlight the punched sayings... but you could use a sharpie, or an Acrylic paint to sit in the 'lows' created by the punch.
