In this episode, I'm making a yeast pie with cabbage and egg based on Lara Katsova's recipe. The main intrigue is the dough, which the author associates with the famous pies from the Metropol Hotel. It involves leavening, milk, eggs, butter, sugar—and quite a lot of dough, which required a bit of a struggle. Especially after one ingredient was left standing on the table. 😄
For the filling, I use about 1.8 kg of cabbage, butter, vegetable oil, milk, dill, eggs, and black pepper. The cabbage is simmered for a long time, then milk is added, and the excess moisture is then removed through a colander. The resulting filling is light and delicate—completely different from the dark, caramelized cabbage and onion I'm used to.
The dough itself is a different story. It's very soft, fluffy, creamy, and quite sweet. So much so that during the tasting, I felt like it would be perfect for an apple or pear pie. But how well does such a sweetness work with cabbage? That's where Irina and I differed slightly.
In the end, the recipe turned out truly delicious. The dough is very well-made, airy, and rich in flavor. The filling is also good, but I personally prefer the darker, caramelized cabbage with onions and peppers. Still, Irina called this version the most delicious cabbage pie of this type she's ever tried.
Another plus is the price. All the ingredients cost about 675 rubles, and there was still enough dough left over for an additional apple and pear pie. It turns out to be a large, filling, and quite affordable pie for the whole family.
And now the main question: is this really the most delicious cabbage pie, or can it be made even better?
