1. HALF AND HALF MEATLOAF AND POTATOES

👉 Secret: the box is the right ratio, already measured — and the ratio is what people get wrong mixing their own.
3. UNSTUFFED CABBAGE LOAF
½ bag shredded coleslaw mix • ½ lb ground beef • 1½ cups jarred tomato sauce. Brown the beef. Half the cabbage, all the beef, half the sauce, then the rest of each. COVER TIGHT, 375°F, 50 min.
👉 Secret: you are buying somebody else's knife work — coring a cabbage is the most awkward job in a home kitchen.
4. LEMON BUTTER FISH AND RICE
½ cup instant rice • ¾ cup hot chicken broth • 2 frozen white fish fillets • butter, half a lemon. Rice and broth in, stirred flat. Fillets on top STILL FROZEN. Butter in thin slices, salt, pepper, lemon over. COVER TIGHT, 400°F, 25 min.
👉 Secret: do not thaw. A frozen fillet gives up its juice slowly, and it goes down into the rice instead of onto a plate.
5. FRENCH ONION MEATBALL SUB BAKE
10 frozen meatballs • 1 can French onion soup • 2 slices provolone. Meatballs in FROM FROZEN, the whole can of soup over them. COVER TIGHT, 375°F, 25 min. Foil off, provolone on, 8 min uncovered.
👉 Secret: in a wide dish that can is a quarter inch deep and the meatballs go leathery. Here they braise.
6. LAZY RAVIOLI LASAGNA
2 cups frozen cheese ravioli • 1½ cups marinara • 1 cup shredded mozzarella. Sauce on the bottom, half the ravioli FROM FROZEN, half the sauce and cheese, then the rest. COVER, 375°F, 35 min. Last cheese on, 10 min uncovered.
👉 Secret: lasagna needs height. In a wide pan the layers spread into a sheet that slides apart on the plate.
7. SHEPHERD'S PIE FOR TWO
½ lb ground beef • 1 cup frozen mixed vegetables • ½ cup beef gravy • 2 cups instant mashed potatoes. Brown the beef, vegetables in FROM FROZEN, gravy, stir once. Into the pan, pressed flat. Mash to the edges, fork ridges on top. 400°F, 25 min.
👉 Secret: instant potatoes hold their ridges instead of sliding into the gravy. For a topping they beat fresh.
8. SAUSAGE AND TATER TOT CASSEROLE
2 cups frozen tater tots • 1 cup sausage gravy • ¾ cup shredded cheddar. Tots in FROM FROZEN, packed tight. Gravy evenly over. Pepper, NO salt. 400°F, 30 min uncovered. Cheddar for the last 8 minutes.
👉 Secret: the church-breakfast casserole at the size it should be, and better at six in the evening than at eight.
9. OLD-FASHIONED BREAD PUDDING ⭐ 4 cups torn STALE bread • 1½ cups milk • 2 eggs • ⅓ cup sugar. Bread into the pan, pressed down lightly. Beat milk, eggs, sugar, cinnamon and vanilla in the measuring cup. Pour over, push the top pieces under. Stand 10 min. Butter on top. 350°F, 40 min.
👉 Secret: stale bread is the ingredient, not waste. Fresh turns to paste; day-old drinks the custard and holds its shape.
10. DUMP-AND-BAKE MACARONI AND HAM
1 cup dry elbow macaroni • 1 cup diced cooked ham • 1½ cups milk • 1 cup shredded cheddar. Everything but half the cheese into the pan, stirred right there until nothing sits dry. COVER TIGHT, 375°F, 35 min. Rest of the cheddar on, 10 min uncovered.
👉 Secret: in a wide pan the milk steams away before the pasta drinks it. Here it stands deep the whole time.
