I Spent €69 at the Viral Collagen Café in Paris... Here's the Truth

I flew to Paris during the heatwave to try 48 Collagen Café, a place that calls itself the "future of wellness hospitality" and barely serves coffee at all.

Instead: a circadian menu that changes through the day, collagen-and-glycine-enriched lattes in every colour, red light therapy masks you wear while you drink, and PEMF "recovery chairs."

Founded by Amandine Fornot, who's built one of the more legitimate wellness concepts I've come across - real science, real backing, real press.

So is it coffee? Barely. Is it interesting? Genuinely, yes.

I flew to Paris during Fashion Week to visit one of the world's most talked-about cafés...

48 Collagen Café isn't really a coffee shop.

It's part wellness clinic, part beauty bar, part café.

Instead of obsessing over espresso extraction, they're serving collagen lattes, adaptogenic drinks, red light therapy, PEMF recovery chairs and a menu designed around your circadian rhythm.

So...

Is this actually the future of coffee?

Or is it just another Instagram trend?

In this video I spend €69 trying everything: from collagen lattes to red light therapy, to find out whether this concept actually lives up to the hype.

— WHAT HAPPENED —

This isn't a normal café review. 48 Collagen Café doesn't fit my usual Whole Bean Index, because half of what they sell isn't coffee at all — it's beauty tech. I brought my friends, we ordered five drinks, I sat under a red light mask mid-smoothie, and I tried to figure out if this is genuinely where coffee culture is heading, or just very good set design.

— THE VERDICT —
Overpriced. Mediocre taste. About 99% aesthetics over flavour. But also: a real founder, real (if overstated for a single visit) science, and a genuinely interesting look at where "café culture" might be going next — just maybe not for coffee people.
