📍Sakura Mochi | Makes 4
Domyoji flour (pink-colored)… 80g
Sugar… 20g
Hot water… 120ml
Strawberries… 4
Smooth red bean paste… 80g
(20g per piece)
Salted cherry leaves… 4
★Preparation
Quickly rinse the cherry leaves under water. If they are very salty, soak them in water for 5–10 minutes.
Pat them dry thoroughly.
Remove the stems from the strawberries, wash them, and pat them dry.
Divide the sweet red bean paste into 4 equal portions and wrap each around a strawberry using plastic wrap.
📝 Mix the Dojoji flour with sugar and hot water, let sit for 10 minutes, then heat in the microwave at 600W for 2 minutes and stir. Add 1 tablespoon of water, heat for another minute, then let rest for 10 minutes. Divide the dough into 4 equal portions, flatten them, wrap the filling inside, and shape them. (Simply covering the filling is also fine.) Wrap each piece in 4 desalted and patted-dry cherry leaves to finish.
📍Medicinal Dessert with White Wood Ear Mushrooms, Lily Bulbs, and Ginkgo Nuts | Serves 2
Dried white wood ear mushrooms… 5g
Lily bulbs… 1/2 to 1 bulb
Ginkgo nuts… About 6 nuts
Agave syrup… 15–20g
Water… 300–350ml
Goji berries, kumquats… A small amount
Soak the white wood ear mushrooms in water, remove any tough parts, and tear into small pieces.
Separate the lily bulb layers one by one and wash them. Remove the thin skins from the ginkgo nuts.
Place the water, white wood ear mushrooms, and ginger in a pot, and simmer over low-medium heat for about 20 minutes.
Add the lily bulb, ginkgo nuts, and goji berries, and simmer for another 10 minutes.
If available, add the goji berries and simmer for 2–3 minutes to finish. Finally, drizzle with agave syrup and garnish with kumquats to taste.
