This is not a box mix carrot cake. Renee rebuilt the classic using three techniques that completely change the finished cake: a warm bloomed spice oil for a lingering finish, toasted walnuts for deeper flavor, and an intensely nutty brown butter cream cheese frosting.

In this video, Renee will show you how to make her Siren’s Song Carrot Cake step by step, including how to bloom the spices in warm oil, why the carrots are grated two different ways, how to prepare the cake pans with a coating of sugar, how to brown butter for cream cheese frosting, and how to make the candied carrot garnish that finishes the cake.

Blooming the spices in oil gives this carrot cake a much deeper, rounder flavor than simply adding dry spices to the batter. The spices become more aromatic and cohesive, with a flavor that lingers long after the bite is gone.

The carrots are also grated two different ways. Most are grated medium fine to give the cake structure and a tender bite, while the remaining carrots are grated more finely so they disappear into the crumb and help create the dense, moist texture Renee wanted without making the cake gummy or overly wet.

Even the pans get a little extra attention. Instead of stopping after greasing them, Renee gives the pans a light coating of white sugar to encourage a beautifully caramelized exterior on each layer.

Then there’s the frosting.

Butter is browned until deeply nutty before being turned into a brown butter cream cheese frosting, giving the finished cake another layer of flavor that ordinary cream cheese frosting simply doesn’t have.

Toasted walnuts and a candied carrot garnish finish the cake.

The result is a carrot cake that tastes familiar at first... and then becomes surprisingly difficult to pin down. Warm spices, toasted nuts, brown butter, carrots, caramelized edges, and cream cheese all seem to arrive at slightly different times, and they linger...
