We captured the Quanquan Mo sizzling on iron griddles, wobbly steamed tofu pudding, egg-filled flatbreads with golden yolk oozing out, and Shizi Mo — flatbreads pressed between scorching hot pebbles. There were sweet jujube pastries that burst open to reveal humble, earthy sweetness. Crispy fried Mahua twisted dough, and Jiang Fan — a deceptively simple porridge that settles deep into your comfort zone. Mian Tang Pao Mo — noodle soup with torn bread — looks unassuming at first, but the more you eat, the more you appreciate its quiet brilliance.
