🍂 baked/steamed pumpkin pudding

560g / 4 cups / 3 su bardağı (küp doğranmış) - Hokkaido squash with skin
140g / 0.6 cups or 9.5 tbsp / 1.5 çay bardağı - melted deodorised coconut oil*
280ml / 1.15 cups / 1.5 su bardağı - unsweetened soy drink
100-120g / 1/3 to 0.4 cup / 7-8 yemek kaşığı-  agave syrup
40g / 0.33 cup or 5.25 tbsp / 3 silme yemek kaşığı - corn starch
a 2-3 cm thumb of fresh ginger (optional)
Pinch of salt to taste

Please use a very sweet Hokkaido squash with bright red skin for this (not butternut squash....).

Slice your squash into small cubes and steam it for about 9 minutes, please leave the skin on :)

Melted deodorised coconut oil and room temp soy drink go into a blender - blend on high speed for about 1 min until the mixture is super creamy and emulsified.

Then, in a blender, blend all the ingredients apart from corn-starch until you get a creamy mixture. Add corn starch and blend for a little bit to combine.

Pour into 2 small/medium Hokkaido pumpkins. Bake 180C (356F) for 30-40 min. Or steam for about the same time!

Please choose a TASTY deodorised coconut oil. Some of them are just gross and vile!! I have a few recommendations for really tasty ones if you are in the EU/UK - let me know if you want me to share those.
