🥣 whipped buckwheat porridge

for the cooked buckwheat:
200g / 1 cup US / 1¼ su bardağı - green unroasted buckwheat
400–500ml / 1¾–2 cups US / 2–2½ su bardağı - water

Simmer the buckwheat for about 20min until it’s cooked.

ingredient for blending with cooked buckwheat:
500ml / 2 cups US / 2½ su bardağı - soy drink
100g / ⅓ cup + 1 tbsp US / ½ su bardağı - coconut cream (optional)
1 banana
5 Deglet Nour dates (use fewer if using Medjool)
Pinch of salt
1–2 tsp / 1–2 çay kaşığı - mushroom powder, like turkey tail
½ tsp / ½ çay kaşığı - cinnamon

Blend all of the ingredients + the cooked buckwheat at high speed in a blender for about a minute. You can add all sorts of things to this!


🥕 lentil cabbage soup
200g / 1 cup US / 1¼ su bardağı - red lentils, soaked overnight
600ml / 2½ cups US / 3 su bardağı - water
200g / 2 cups US / 2½ su bardağı - white cabbage, chopped
200g / 1½ cups US / 1¾ su bardağı - Hokkaido squash, chopped
100–150g / ¾–1 cup US / 1–1¼ su bardağı - onion, chopped
200g / ¾ cup + 1 tbsp US / 1 su bardağı - unsweetened soy yoghurt (optional)
A bit of saffron
1 thumb-sized piece of ginger, grated
½ tsp / ½ çay kaşığı - blue fenugreek
1–2 tsp / 1–2 çay kaşığı - sea salt, to taste

Rinse and soak 200g (1 cup US) red lentils and soak either overnight or for 30 min. Finely chop all the veg, grate the thumb of ginger. Saute onions and cabbage first in a bit of oil for about 10 min. Then add everything else and cook for about 20 min until the lentils have softened.


🍵 fresh turmeric latte
100g / ⅓ cup + 1 tbsp US / ½ su bardağı - coconut milk
400g / 1⅔ cups US / 2 su bardağı - soy drink (or whatever is your fav)
A few dates to taste
Pinch of black pepper
Pinch of salt
1 green cardamom pod
40g / 3 tbsp US / 3 yemek kaşığı - fresh turmeric (about 2-3 thumbs)
A bit of fresh ginger
Turmeric powder to sprinkle

100g (⅓ cup + 1 tbsp) coconut milk + 400g (1⅔ cups) soy drink (or whatever is your fav) + a few dates +
pinch of black pepper + pinch of salt + 1 green cardamom pod + about 2-3 thumbs of fresh turmeric + a  bit of fresh ginger

Blend for 1 minute, strain through a fine mesh sieve and warm up. Sprinkle it with some turmeric powder.
