He's clever, he limit the menu so he can controls the quality on every order

I love how friendly the chef is and how everyone involved helps maintain a clean space. The reason for why he opens so early is funny too 😄

Fascinating look into another culture, he could expand endlessly and amass wealth and fame but he would rather keep it simple, stick to the basics of preparing 100-120 bowls of soup perfectly, and when they’re gone it’s time to go home. I cannot help but to respect that.

The way that the customers are waiting outside, not creating a huge line with 30+ orders at the same time and not complaining about the time the food will be served while respecting other customers and the owner/chef is truly remarkable. Amazing job to you all, respecting each other and having this delicious ramen.

drinking Sapporo at 5am is a choice

I love how all the customers are quietly and patiently waiting in line outside for their time to be seated inside

THIS. This right here shows someone who care about their product, puts a lot of love into what they create.

Even the customers pay respect to the restaurant by cleaning up after themselves just goes to show what an advanced civilization not seen in most parts of the world, and when the respect is mutual, violent crime rarely occurs.

I watched from beginning to end. Fascinating how he has streamlined his process so much. The base soups he makes daily. Just wow, the amount of work that goes into it.

This is what I love about Japan very good food, clean, smart people, respectful great country.

I admire the Japanese way. They take so much pride in their crafts. It’s a lovely energy to be part of. I hope to visit Japan in my lifetime.
❤

This Chef is a Lone Kitchen Performer….The most ORGANIZED, HYGIENIC, AND CHOREOGRAPHED cooking!  Very impressive man!👏🏻👏🏻👍🏼

The chef and shop owner has a friendly vibe. Very meticulous and keeps everything neat and organized. I appreciate this guy. WIshing him success

This is the cleanest kitchen I've seen on this channel.  I also love that he uses a timer - love that everything is so methodical and meticulous.

It’s incredible to see all these solo owners run these restaurants. I’ve seen quite a few on this channel. Incredibly hard working people. I wish you much success from 🇺🇸

He sells healing soup. Right on.

こういう生きた文化財みたいな人は過労で倒れないことを祈りたい。

The descipline, loyalty towards his food and customers, quality of ingredients, cleanliness… was impeccable. Even the customers wiping down before they left was so courteous. Japanese culture is far ahead of the world

I’m not a morning person, but if I lived near where he had his shop. I’d set the alarm at least once a week 😋

2 minutes in and I am already impressed with his brand style, cleaniness, station setup and prep. You can really tell he is enjoying it as a perfectionist.
