While Portal 1 always had custom maps, it's map scene never reached the same size as its squeal Portal 2, but this doesn't mean there aren't any good Portal 1 Custom Maps out there.

The map at around 6:41 is used in a mod called “Hetzchase Nailway” which is a series of maps made by the dev of this map

About playing gm_construct in Portal, you can play the port of gm_construct from the HL2 workshop, works perfectly fine because Portal 1 and HL2 share the same engine branch. But this was interesting and weird.

I think the intention for that first gap in the first map is maybe to abuse air strafing and no portal funnel option. You could maybe get and extra pass through the portal on the floor by strafing through the air and entering the floor portal at an angle that would give you some height over the exit portal to add some distance. The portal funnel setting would normally prevent that.
