Throughout the world, honey is part of our culinary heritage. It accompanies the recipes of great chefs as well as the products offered in local markets, but behind each jar lies a territory, flowers, bees, and the expertise of passionate beekeepers.

In Corsica, the endemic black bee gives rise to the powerful honeys of the maquis. On the Greek island of Ikaria, a family perpetuates a beekeeping tradition passed down through generations and produces a renowned thyme honey.

In the Pyrenees, the hives are moved to higher altitudes to follow the heather bloom. Further afield, in the Kaçkar Mountains of Turkey, a spectacular tradition still endures: beehives are placed several meters high in the trees, notably to protect them from bears.

The journey continues in Provence, amidst the lavender fields of the Luberon, where a few weeks of flowering determine the entire harvest.

From maquis honey to thyme, heather, or lavender honey, these products reveal tastes and textures shaped by their environment. They also tell the story of a fragile natural heritage, intimately linked to the survival of bees.
