Kochi style Erachi choru
Beef 2 kg thighs biriyani cut
Surekha rice 2 kg
10 medium onion thinly sliced
Shallots 2 handful
Tomato 4 finely chopped
Inji 4tbs
Garlic 8 tbs
Green chilli 25
Curry leaf
Crushed pepper 2 tbs
Garam masala 2 tbs
Turmeric 2tbs
Coriander powder 2 tbs
Curd 2tbs
Salt
Spicy chilli powder 1 tsp
Lime 1 medium size
Coriander leaves small handful
Mint leaves same
Coconut oil 4 tbs
Marinate above ingredients in the beef
And pressure cook beef ( water level should be just above the meet )
Preparation
In a biriyani pot add
4 tbs Dalda
Coconut oil 4 tbs
Pepper 2 ( full )
Cinnamon 4 medium size
Clove 2 tsp
Fennel seed 1 tsp
Cardamom 12
Star anise 2
Bay leaf 2
To cook rice
For 1 cup rice you have to add 2 1/2 cup boiling water
So to the biriyani pot you can add 1 cup cooked beef stock , and 11/2 cup boiling water
Then add washed rice ( to the boiling water )
Add salt if needed
Then cook until rice is half cooked
Then combine cooked beef and rice and again cook for almost 30 minutes

Cook the beef on high flame until one whistle, then reduce the flame to low and cook for 20 –25 minutes. The exact cooking time depends on the age and tenderness of the meat , younger beef may take around 20 minutes, while older or tougher beef may need up to 25 minutes. the beef will be perfectly cooked. Let it rest for the pressure to release naturally .. DONT FORCE RELEASE THE PRESSURE..
For mutton:
One whistle on high flame, then 15 minutes on low flame. Not more than that.. DONT FORCE RELEASE THE PRESSURE..
I have been following this method for years and have never ended up with undercooked meat.
One more tip for erachi choru:
Use coconut milk instead of water.
