At Dwór Sanna, the ambition is to create a place as close to true self-sufficiency as possible. Today, approximately 85% of the produce used in the kitchen is produced on-site. The hosts produce their own vegetables, meat, cheeses, other dairy products, preserves, and wine. Bread is also baked on-site, although flour is still purchased externally. The first of the farm's own rye has already been sown.
We take a look behind the scenes of this extraordinary "farm-to-table" model. Sheep grazing in the vineyard help naturally fertilize the vineyard while also providing milk used for cheesemaking. The cheese factory produces, among other things, mature cheeses, sheep's milk cheddar, mozzarella, and Camembert. Fresh vegetables, herbs, and fruit are brought from the garden to the kitchen, and surpluses are fermented, marinated, and processed for winter use.
The farm itself largely dictates the rhythm of the restaurant. The menu changes with the seasons: in spring, more leaves and flowers appear, fresh vegetables dominate in summer, and in autumn and winter, cheeses, meats, fermentations, vinegars, and preserves gathered during the season play an increasingly important role.
With Karol Nizio, we explore not only the farm and the food production process but also the prepared dishes. From our own bread and fermented butter, through cheeses, cold cuts, and vegetables, to pond fish, meats from our own farm, and products prepared especially for the restaurant.
We examine the labor involved in combining agriculture, livestock, cheesemaking, winemaking, food processing, gastronomy, and the hotel industry—and where, in practice, the limits of self-sufficiency lie. It's also a story about food quality, seasonality, and how a kitchen can adapt to what the land provides at any given moment, instead of ordering everything from wholesalers.
