In this vlog, I’m sharing two homemade dishes that I prepared during the day: Stuffed Bell Peppers and Vegetarian Pasta with Homemade Tomato Sauce.

🫑 Stuffed Bell Peppers

Ingredients:

Bell peppers
Ground beef
Rice
Onion
Fresh herbs for dolmeh
Tomato paste
1 fresh tomato
Oil
Salt
Black pepper
Turmeric
Water
Split peas (optional)

Method:
Sauté the chopped onion in a little oil until softened. Add the ground beef and cook until browned. Then add the rice, fresh dolmeh herbs, tomato paste, and chopped tomato. Season with salt, black pepper, and turmeric, and sauté everything together for a few minutes.

Add a little water and let the mixture simmer until most of the liquid has been absorbed.

Meanwhile, prepare the bell peppers by removing the tops and seeds. Fill each pepper with the prepared mixture and arrange them upright in a pot.

Pour in about two cups of water, cover the pot, reduce the heat to low, and let the peppers gently cook until tender.

In the traditional version, split peas are also commonly added to the filling, so you can add some if you like.

🍝 Vegetarian Pasta with Homemade Tomato Sauce

Ingredients:

Pasta
Onion
Carrot
2 fresh tomatoes
Tomato paste
Fresh parsley
Oil
Salt
Black pepper
Pul Biber (Aleppo pepper)

Method:
Cook the pasta according to the package instructions.

For the sauce, thinly slice the onion and sauté it in a little oil until golden and softened. Add the grated carrot, salt, black pepper, and Pul Biber, then stir in the tomato paste and sauté until fragrant.

Add the chopped fresh tomatoes and cook for a few more minutes, allowing the tomatoes to soften and the flavors to come together.

Serve the pasta with the homemade vegetable sauce and garnish with freshly chopped parsley.
