People forget that Gandalf saved the Chieftain of the Eagles from an arrow wound. He definitely couldn't face a legion of orc archers, once the Great Eye saw the Ring's approach.

Yeah, a lot of people seem to forget that flying into Mordor is no simple feat. The only reason why Frodo and Sam didn't catch Sauron's attention was due to how unnoticeable and small they were, but an Eagle flying directly into Mordor and making a beeline for Mt Doom? That would definitely get Sauron's attention, along with the Nazgul and every orc in Mordor.

Aside from the logistical impediments, which many here have keenly pointed out; the most important aspect of the journey was keeping Sauron 100% percent in the Dark about the Ring. From Sauron’s perspective the Ring went from Gollum to “Shiiiire, Bagginssss” and then just banishes until he’s falsely led to believe that Aragorn has claimed it for himself and is coming to get him (allowing Sam & Frodo to sneak through the Southwest). Anything remotely more high-profile would have aroused Sauron’s suspicions! He was a master tactician, so were his lieutenants, perhaps the movie cannot convey that as effectively as the books and hence the whole “Why didn’t just fly there”.
