Thereโs not such a big variety of fungi species to be seen as we get into the winter months. For edibles, expect to find hedgehogs, oysters, blewits, amethyst deceiver & winter chanterelles. As for medicinal mushrooms, birch polypore are starting to harden so collect those before theyโre solid. Other medicinal fungi such as turkey tail & ganoderma species are good to harvest all through winter!
